Cut Story
A half share is half a hog, butchered by our processor to a cut sheet you fill out at order time, then vacuum sealed and flash frozen for pickup. You get the full range of cuts a single animal produces, scaled to a half. Chops, bacon, ribs, shoulder, tenderloin, sausage, ground pork, and the rendering fat if you want it. The animal is identified at slaughter and tracked through the cut floor, so what you take home came from one named hog raised on Circle 7 pasture.
The economics of a share are simple. You commit ahead of harvest, the ranch knows exactly how many hogs to grow out, and the savings versus per-cut pricing get passed back. $8.75 per pound across 80 pounds of finished cuts works out to $700 total. The same cuts sold individually would run $11 to $15 per pound on average. The trade is upfront commitment and freezer space.
Pickup is August 15 2026 at the ranch (or local delivery if you are within range). Your share comes packed in two or three flat rate cooler totes, ready to transfer to a chest freezer. Most half shares fit in a 7 cubic foot freezer with room to spare.
Why a Share
Buying a share is the most efficient way to stock a year of heritage pork. You support the ranch directly, you lock in pricing ahead of feed cost swings, and you get cuts you would not normally order one at a time. Most share buyers tell us the lard, the soup bones, and the secondary cuts (jowl, neck, hocks) end up being their favorites.

How It Ships
Half shares are pickup at the ranch on August 15 2026 or local delivery within our delivery zone (verify zone at checkout). All cuts are vacuum sealed and flash frozen. Plan to bring coolers if your drive is more than 90 minutes, or arrange local delivery.
Suggested Cooking Method
Each cut has its own canonical method. See the individual cut pages for specifics. The blanket rule across heritage pork is the same: pull whole muscle cuts at 145F, not 160F. Low and slow for shoulder and ribs (200 to 205F internal). Render fat into lard for cooking through the year. Use bones for stock.

Customer FAQs
How much freezer space do I need for a half share? Roughly 4 cubic feet for 80 pounds of vacuum sealed cuts. A 7 cubic foot chest freezer has comfortable room. A standard upright freezer compartment in a refrigerator will not be enough.
Can I customize the cut sheet? Yes. After you order, our processor sends you a cut sheet to specify chop thickness, sausage seasoning, bacon vs fresh belly, roast sizes, ground pork pack weights, and bones/fat/organs. Default cuts are sensible for most home cooks.
What if I do not want all 80 pounds at once? A half share is a bulk purchase. You receive everything at pickup and it lives in your freezer. If 80 pounds is more than you have space for, look at the quarter share option or buy individual cuts.
How long does the meat keep frozen? Vacuum sealed and flash frozen at 0F or below, pork keeps at peak quality for 12 months and safely far longer. Most share buyers use up their share in 8 to 12 months.
Can I split a half share with a friend? Yes, many buyers do. You will receive one consolidated order from us. How you split it after pickup is up to you.
Pairing Recommendations
Every cut pairs differently. The general rule for heritage pork is brighter, sharper accompaniments than you would use for richer beef cuts. Stone fruit, mustard, vinegar pickles, dry white wines, off-dry Rieslings, and ambers all work. See individual cut pages for specifics.
