Cut Story

The F1 Wagyu Cross whole share is the upgrade path from our Black Angus whole share. Same operational model (one steer, cut to spec, processed at a USDA-inspected facility) with a fundamentally different animal. The F1 Wagyu Cross calf is sired by a Full Blood Wagyu bull on our Black Angus dam herd. The calf is 50 percent Wagyu by genetics and carries marbling that puts the rib and short loin cuts into the BMS 6 to 8 range, with downstream effects on every other cut in the carcass.

A whole share of an F1 Wagyu Cross animal gives you a 12-month freezer load of premium beef at a per-pound rate that is meaningfully below what you would pay buying the same cuts individually. You get two of every steak, all four primal roasts, two briskets, all the short ribs and stew meat, and roughly 150 to 180 pounds of F1 Wagyu Cross ground beef that is in a category by itself. The whole share is how serious home cooks (and small restaurants) source premium beef at scale.

Marbling and Grading

Target BMS: 6 to 8 on the Japanese scale across the rib and short loin. USDA grade equivalent: high Prime. Chuck and round primals grade lower by structure but still significantly above commodity Angus standard.

How It Ships

Whole shares do not ship. Pickup at the ranch in Colorado City, Arizona on the specified March 2027 pickup date, or via local delivery to St. George, Hurricane, Kanab, and Page.

What’s Different About Circle 7

The F1 Wagyu Cross whole share at this scale is essentially unavailable in the U.S. direct-to-consumer market outside of niche local relationships. Mainstream Wagyu cross programs are sold cut-by-cut through wholesalers because the supply chain cannot keep one animal intact through processing for one customer. We can, because we raise the animal ourselves and the processing facility is sized to do single-animal cut sheets. The whole share traces to one ear tag, one harvest date.

Q: Why is the price meaningfully higher than the Angus whole share? A: F1 Wagyu Cross animals cost more to raise. The Wagyu sire is expensive, the finish window is roughly 150 days longer than commodity Angus, and the ration is more expensive. The price reflects those inputs. The per-pound savings over individual cut purchases is still substantial.

Q: What cuts are included? A: Everything the animal produces, doubled. Ribeyes, NY strips, filets, sirloins, flat iron, flank, skirt, chuck and round roasts, brisket, short ribs, stew meat, shanks, ground, bones if you want them.

Q: How much freezer space do I need? A: 14 to 17 cubic feet of chest freezer.

Q: How long does a whole share last a family? A: A family of four eating beef three to four times a week works through it in about 12 months.
