Cut Story

A half share is exactly what it sounds like. Half of one Black Angus steer, raised and finished on our ranch, processed at a USDA-inspected facility, and cut to a spec you select. You pick the steak thickness, the roast sizes, how much you want ground, whether you keep the organ meats. You get a balanced cross-section of the entire animal: steaks (ribeye, NY strip, filet, sirloin, flat iron, flank, skirt), roasts (chuck, brisket, round), short ribs, stew meat, ground beef, and bones if you want them. The yield works out to roughly 242 pounds of packaged, ready-to-cook beef from a finished animal of the target weight.

The economics are simple. You are buying the whole carcass at a per-pound rate, which means you pay roughly the price of a premium ground beef but get the entire cut profile. A ribeye in your share costs the same per pound as the bones. That is how every traditional rancher-to-customer relationship was structured before the meat industry got intermediated.

Our Black Angus program is the foundation of the ranch. The animals are born, raised, and finished here. They eat the same grass and the same finish ration. The animal that becomes your share is the animal you can come look at if you want to.

Marbling and Grading

USDA grade target: Choice to Prime. Black Angus genetics in our program consistently grade in the upper Choice range with a meaningful percentage hitting Prime. Marbling distributes across the carcass, with the ribeye and short loin sections carrying the most.

How It Ships

Half shares do not ship. Pickup is at the ranch in Colorado City, Arizona on August 15, 2026, or via local delivery to St. George, Hurricane, Kanab, and Page on the same day. We notify you 7 to 10 days before pickup with your cut sheet to review.

Suggested Cooking Method

What’s Different About Circle 7

The shares market is mostly aggregator brands that ship cuts in monthly subscription boxes. We are not that. A half share from us is half of one specific animal you can identify by ear tag. You can drive to the ranch and meet the animal before harvest if you want to (most customers do not, but the option is real). Pickup is a relationship, not a delivery confirmation email. That is what ranch direct means at the share level.

Customer FAQs

Q: What cuts are included? A: Ribeyes, NY strips, filets, sirloins, flat iron, flank, skirt, chuck roasts, brisket, round roasts, short ribs, stew meat, ground beef, and bones if you want them. Cut sheet is fully customizable.

Q: How much freezer space do I need? A: A standard chest freezer (7 to 9 cubic feet) holds a half share with room to spare. A full kitchen freezer alone is not enough.

Q: Can I split it with a friend or family member? A: Yes. We can package two cut sheets (one for each of you) if you let us know during the cut sheet review.

Q: What if I don’t want some cuts (organs, bones, etc.)? A: Tell us on the cut sheet. We can substitute with extra ground or omit entirely.

Q: Do I have to come to the ranch? A: We deliver locally to St. George, Hurricane, Kanab, and Page on pickup day. Outside that radius, you come to us.

Q: How long will it last in the freezer? A: 12 months at zero F for best quality on whole muscle cuts, 6 to 9 months on ground.

Q: Can I lock in next year’s share now? A: Yes. We open the next cycle’s reservation 60 days after the current pickup.

Pairing Recommendations

Storage Instructions

Transport home in a cooler if local delivery is more than 30 minutes. Get into a chest freezer at zero F within 90 minutes of pickup. Whole muscle cuts last 12 months. Ground lasts 6 to 9 months.
